Cherry Chocolate Truffles
INGREDIENTS
- 1 1/2 cups almonds, crushed
- 3/4 cup dates, pitted
- 1 cup dark cherries, frozen
- 1/3 cup shredded coconut
- 1/2 cup coconut oil
- 1/4 cup cacao
- 1/4 cup honey
- 1/2 tsp vanilla extract
Toppings:
shredded coconut flakes
DIRECTIONS
- STEP 1. Combine all of the ingredients in a food processor and blend until smooth. Refrigerate for 30 minutes so it is easier to work with.
- STEP 2. Roll into balls of your desired size and dip in shredded coconut flakes.
- STEP 3. Refrigerate for up to 7 days.
