This Cinnamon Swirl Banana Bread is such a delicious treat. Cinnamon Swirl Banana Bread
Serves 8
Ingredients
For the batter:
- 4 ripe bananas
- 2 eggs
- 1 tbsp vanilla extract
- 1/4 cup coconut oil, melted
- 1/2 cup nut milk
- 2 tbsp monk fruit sweetener
- 1 tbsp zen basil or chia seeds
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 cups almond flour
For the cinnamon swirl:
- 3 tbsp coconut oil, melted
- 3 tbsp coconut sugar
- 2 tbsp cinnamon
Directions
- Preheat oven to 375 F or 190 C. Line a 9×5-inch bread loaf with parchment paper and lightly grease with cooking spray. Set aside.
- In a large bowl, mash 3 and 1/2 of the bananas. Set the other half aside to use as topping.
- Add the eggs and whisk. Add the vanilla extract, coconut oil, nut milk, monk fruit sweetener, zen basil seeds, baking powder, baking soda and almond flour. Mix until well combined.
- In a smaller bowl, mix the coconut oil, coconut sugar and cinnamon. It should be a thick paste. If it’s too thin, it won’t be able to create a swirl.
- Pour 1/4 of the banana bread batter into the loaf pan and spread evenly. Add 2 tsp of cinnamon swirl and using a butter knife, swirl it around. Pour half of the remaining bread batter and spread evenly. Add the remaining half of the cinnamon mixture and swirl into the batter. Repeat this step with the remaining bread batter and cinnamon mixture.
- Thinly sliced the remaining half of banana and place down the middle of the bread. Bake for 50 minutes until golden brown. Let the bread set for 20-30 minutes until you slice it.
