Spaghetti bolognese is one of my favorite meals on earth. I have loved it ever since I was a little girl and still get so excited for spaghetti night. This is a lightened up version using hearts of palm spaghetti. They are purely made out of hearts of palm, gluten free, low carb, and low calorie. I love the taste and it goes so well with the bolognese. If you have time, soak the spaghetti in almond milk for 20-30 minutes to remove any veggie taste it may have but with this sauce I find that it doesn’t need to be soaked. The spices in the bolognese bring so much flavor to this dish. I particularly like to add cinnamon to my bolognese which gives a bit of natural sweetness without having to add a pinch of sugar to the tomato sauce. It is so good! I hope you enjoy as much as I do.
Bolognese with Hearts of Palm Spaghetti
Serves 6
INGREDIENTS
- 2 tbsp extra-virgin olive oil
- 500g or 1 lbs grass-fed beef
- 1 tsp cumin
- 1/2 tsp cinnamon
- 1/2 tsp turmeric
- 1 tsp sea salt
- 1 tsp black pepper
- 1/2 tsp red crushed pepper
- 1 red onion, finely chopped
- 3 garlic cloves, minced
- 1 carrot, finely chopped
- 1/2 red bell pepper, finely chopped
- 8 baby portobello mushrooms, finely chopped
- 1 jar (25 oz.) tomato sauce
- 3 tbsp parsley, chopped
- 1 tsp thyme, fresh or frozen
- 2 packages angel hair hearts of palm
TOPPINGS
- grated cheese (optional)
DIRECTIONS
- STEP 1. Heat 1 tablespoon of olive oil in a medium pan. Add the beef, cumin, cinnamon, turmeric, sea salt, black pepper and red crushed pepper. Mix well with a wooden spoon, making sure to break up the meat. I like to use two wooden spoons to break up the meat into tiny pieces. Cook for about 10 minutes, until browned and turn off heat.
- STEP 2. In a medium pot, heat 1 tablespoon of olive oil. Add the onion, peppers, garlic and cook for 2-3 minutes, until tender. Stir in the mushroom and continue cooking another 2 minutes.
- STEP 3. Add the meat mixture, tomato sauce and bring to a boil. Reduce heat to a low simmer and cook for 15 minutes. Add in the parsley, thyme and turn off heat.
- STEP 4. Drain the hearts of palm noodles and rinse well with water. Add to the bolognese and mix until well combined.
- STEP 5. Top with grated cheese and enjoy.
