One of my favorite indulgences is chocolate and this cake is absolutely delicious! Being free from refined sugars, dairy, gluten, and grains – it is the perfect special treat for the kids to enjoy this Easter.
Chocolate Banana Cake
Serves 8
INGREDIENTS
For the Cake:
- 3 bananas, mashed
- 1/4 cup organic coconut sugar or monk fruit sweetener
- 1/2 cup unsweetened almond milk
- 100 g dark chocolate, melted
- 1/2 cup coconut oil
- 4 eggs
- 1 tsp baking powder
- 1 tsp vanilla extract
- 3/4 cup almond flour
- 1/2 cup ground flaxseeds
- 1/4 cup raw cacao powder
For the Chocolate Syrup:
- 3/4 cup coconut milk
- 1 tbsp maple syrup or raw honey
- 60g dark chocolate
- 3 tbsp raw cacao powder
Toppings:
1/2 cup walnuts, chopped
DIRECTIONS
For the Cake:
- STEP 1. Preheat the oven to 350F.
- STEP 2. Line a baking dish with parchment paper and lightly grease all the sides with coconut oil.
- STEP 3. In a medium size sauce pan, melt the chocolate, sugar, almond milk and coconut oil over medium heat.
- STEP 4. Mash the bananas in a mixing bowl. In the same bowl, pour the melted mixture and stir well. Beat in the eggs and vanilla. Add the almond flour, ground flaxseeds, cacao, and baking powder.
- STEP 5. Add this mixture to a blender or food process and blend until smooth.
- STEP 6. Pour the cake mixture into the baking dish and bake for an hour, or until a toothpick comes out clean. Allow to cool before transferring to a serving plate.
For the Chocolate Syrup:
- STEP 1. Combine the maple syrup, coconut milk, cacao powder, and chocolate in a small sauce pan over medium heat. Bring to a boil, stirring constantly.
- STEP 2. Remove from heat once all is melted.
- STEP 3. Pour the syrup over the cake and spread out evenly. Top with chopped walnuts and enjoy!
