In honor of Mother’s Day tomorrow, I am sharing this special recipe that my mom and I created together. We both love tiramisu so much and wanted to develop a recipe that is easy to make at home but also healthier. We made our own gluten-free lady fingers which turned out incredible and instead of sugar, we used Sukrin fiber gold syrup as sweetener – you can try it with maple syrup or monk fruit too! Give it a try and surprise your Mom tomorrow with this lovely tiramisu! xx
Gluten-Free Tiramisu
Serves 6
INGREDIENTS
For Lady Fingers:
- 3 eggs at room temperature
- 1 tsp vanilla extract
- 1 tbsp Sukrin fiber syrup
- 1/2 tsp baking soda
- 1/2 cup almond flour
For The Cream:
- 3 eggs at room temperature
- 1 tsp vanilla extract
- 8 oz mascarpone cheese, at room temperature
- 2 tbsp Sukrin fiber syrup
For The Dip:
- 1 cup espresso or instant coffee
- 2 tbsp rum or brandy
- 1 tbsp Sukrin fiber syrup
Toppings:
- 1 tbsp cocoa power for dusting
- 1 oz dark chocolate
DIRECTIONS
For Lady Fingers:
- STEP 1. Preheat oven to 325 F.
- STEP 2. Place parchment paper on a baking sheet.
- STEP 3. Separate the egg whites from the yolks in two different bowls. Beat the egg whites until firm and fluffy. In a separate bowl whisk egg yolks, vanilla, fiber syrup, baking soda and almond flour. Using a spatula carefully fold in the whipped egg whites, making sure not to over mix the batter.
- STEP 4. Put the batter into a ziplock bag, cut one of the corners and pipe the batter into lady finger shapes ( around 1 inch wide and 3 inches long). They don’t need to be perfect.
- STEP 5. Bake for 12-15 min until they have a slight golden color. Remove from the oven and while warm transfer to cooling rack. You can make these the day before.
For The Sauce:
- STEP 1. Separate the egg whites from the yolks in two different bowls. Beat egg whites until firm and fluffy. In a separate bowl whisk egg yolks, vanilla, mascarpone and fiber syrup. Using a spatula carefully fold in the whipped egg whites.
- STEP 2. In a small bawl combine coffee and rum or brandy.
- STEP 3. Soak 6 lady fingers one at a time in the coffee mixture and arrange them in the bottom of a 8”x 8” Pyrex pan. Spread half of mascarpone mixture over them and repeat with the second layer. Sprinkle with cocoa powder and finish with grated chocolate. Chill at least 8 hours and if you have time, overnight!
