Muhammara is a Middle Eastern red pepper and walnut spread. My good friend Arwa made this for me last week and I fell in love with the dip. I am always looking for new ways to top my GGs and this is a great alternative to hummus. It is lower in carbs, higher in fiber and extremely delicious. Serve with GG fiber crackers or vegetable crudite.
Muhammara Dip
Serves 6
INGREDIENTS
- 1 large roasted red bell pepper
- 1/4 cup red onions
- 1 garlic clove
- 2 tbsp freshly squeezed lemon juice (I always use half a lemon)
- 1 tsp ground cumin
- 1 tsp sweet paprika
- 1/2 tsp smoked paprika
- 2 tbsp tahini
- 1 tbsp plain Greek yogurt
- 1 to 2 tsp sea salt
- 2 to 3 tbsp Al Wadi pomegranate molasses
- 1 tsp red pepper flakes
- 2 tbsp extra-virgin olive oil
- 3 tbsp water
- 1 cup walnuts, lightly toasted and cooled
- 4 to 6 tbsp bread crumbs (I used GG fiber crackers)
DIRECTIONS
- STEP 1. Add all of the ingredients to a food processor and mix until very smooth! Garnish with extra-virgin olive oil, fresh mint and walnuts. Serve with GG fiber crackers or crudite.
