This yummy smoothie is packed with vitamins, minerals, and antioxidants. The cashews are a high source of vitamins E, K, and B6, which are important for a healthy immune system. They also provide heart protective monounsaturated fats, similar to those found in olive oil.

Strawberry Cashew Smoothie

Serves 2

INGREDIENTS

  • 1 cup raw cashews
  • 1 cup water
  • 1 cup almond milk
  • 2 cups strawberries
  • 1/2 tsp vanilla extract
  • 1/2 banana
  • 1 tsp chia seeds
  • 1 droplet liquid stevia
  • 4-5 ice cubes

DIRECTIONS

  • Soak cashews in one cup water for two hours until soft.
  • Combine all of the ingredients in the blender and blend until smooth.
