This savory crepe pizza with truffles, turkey and cheese is the ultimate comfort healthy meal. The crepes that I used are gluten free, have zero carbs and made from egg and cauliflower. If you aren’t able to purchase these egg thins, make your own crepes by using the batter from this recipe. I added a shredded goat cheese but the recipe can be made with any kind of cheese you desire. I personally like to switch up the recipe by using ham or prosciutto instead of turkey. You can also make it meat free and add mushrooms! If you have arugula or any fresh herbs, that can make a nice addition as well. It is so delicious and perfect for entertaining. All of your guests will be pleasantly surprised with this creative recipe.
Crepini Truffle Pizza
Serves 6
INGREDIENTS
- 1 jar of tomato basil sauce
- 6 large crepini thins
- 8-10 slices turkey, ham or prosciutto (sliced into small pieces)
- 1 ( 2 oz. ) jar truffle carpaccio slices
- 1 cup shredded cheese
- chili flakes to season
DIRECTIONS
- STEP 1. Preheat oven to 400 F or 200 C.
- STEP 2. Spead 2-3 tablespoons of tomato sauce in a large skillet. Try to use a skillet that is as big as the crepini thins.
- STEP 3. Top with one crepini thin. Add 2-3 tbsp of tomato sauce, then top with turkey, truffle carpaccio, and shredded cheese. Repeat this step until you finish the ingredients. I use about 5-6 crepini thins. Season with chili flakes on top.
- STEP 4. Cover the skillet and bake for 10 minutes. Remove the cover and broil for a minute, until golden. Slice and serve while it is warm!
