This is the perfect meal for a mid-week dinner. It is super simple to make. Marinade the chicken from the night before and all you have to do is pop it in the oven when you get home from work. While the chicken is roasting, you can prepare the cauliflower puree and green beans. It is so comforting, yet so simple.
Roasted Chicken with Cauliflower Puree
INGREDIENTS
- 6 organic chicken drumsticks
For Marinade:
- 1/2 orange, juiced
- 1 tsp dijon mustard
- 1 tbsp extra virgin olive oil
- 1 tsp sea salt
- 1 tsp black pepper
- 1 tsp fresh thyme
DIRECTIONS
- STEP 1. Mix all of the ingredients for the marinade in a mason jar and shake well.
- STEP 2. Place the chicken in a large zip lock bag and pour the marinade in. Marinade in the fridge overnight or for at least 2-4 hours.
- STEP 3. Preheat oven to 450 F.
- STEP 4. Line a baking dish with foil and add the marinaded chicken. Pour any marinade over the chicken and bake.
- STEP 5. Bake chicken for 25 minutes on one side, turn over and bake for another 25 minutes. It will be golden and crispy.
- STEP 6. Serve over cauliflower puree and a side of green beans.
Cauliflower Puree
INGREDIENTS
- 1 head cauliflower florets, can use frozen as well
- 2 garlic cloves
- 1 medium potato (optional)
- 1 tsp sea salt
- 1 tbsp grass-fed butter or ghee
- 2 tbsp plain Greek yogurt
- 1/4 tsp black pepper
DIRECTIONS
- Step 1. Bring water to a boil in a large pot and place cauliflower, garlic and potato in it. Cook covered for 10 minutes, so the cauliflower is tender but not mushy. Remove from heat. Drain well.
- Step 2. Place cooked cauliflower in the food processor with the rest of the ingredients. Blend until it has the consistency of mashed potatoes.
Green Beans
INGREDIENTS
- 1 bag green beans
- 2 garlic cloves, grated
- 1/2 lemon, juiced
- 1/2 tsp sea salt
- 1 tbsp extra virgin olive oil
DIRECTIONS
- STEP 1. Bring water to a boil in a large pot and place beans in it. Cook for 5-10 minutes, just until tender. Drain and run cold water over them.
- STEP 2. Heat a skillet with olive oil and sauté the beans for 2-3 minutes. Grate garlic over the beans and squeeze a little lemon. Toss well and transfer to a serving plate.
Could you use chicken breast instead of chicken drumsticks?
