There are so many different pesto recipes, and each one has its own unique taste. I’ve made pesto with spinach, basil and with a variety of nuts. This is my new favorite pesto to pair with black bean pasta. The recipe has a good hit of garlic and lemon, which really adds a little kick. The pesto itself is so light and creamy. If you enjoy spicy foods, I suggest adding half of a hot pepper of your choice for a little heat!
Arugula Pesto
INGREDIENTS
- 2 cups arugula
- 1 avocado (optional)
- 3 garlic cloves
- 1/2 cup pine nuts
- 2-3 tbsp extra-virgin olive oil
- 2-3 tbsp water
- juice of 1 and 1/2 lime
- salt & pepper
OPTIONAL:
- 1/2 serrano pepper for extra kick
DIRECTIONS
- STEP 1. Add all of the ingredients to a blender and blend until well combined and smooth.
- STEP 2. Add more lime juice or olive oil/water if it feels too thick.
