Avocado toast is having a moment right now and for a good reason. Avocados are a great source of fiber, potassium, Vitamins A, E & K and Monounsaturated Fats (the good fats:). When I make avocado toast at home, I use high-fiber, low-gluten bread or GG crackers, when I eat out I shoot for gluten-free or whole grain bread.
