I love celebrating Easter Sunday with my family as it is a wonderful time to get everyone together. It also signifies the beginning of Spring which means it’s time for delicious light vegetable-based dishes. Here are some of my favorite recipes that would make a #healthwithnedi approved addition to any Easter brunch.

Stuffed Mushrooms – These vegan bites are the perfect way to pique everyone’s appetite pre-brunch.

Grain Free Spinach Muffins  – These muffins are a great low-carb, high in fiber substitute for the traditional sugar-laden muffins. They are great to have out for everyone to nibble on.

Grain-Free Spinach Muffins

Vegetarian Frittata – This frittata is full of fresh and nutritious spring vegetables that will make any brunch table a little bit healthier.

Lentil Salad with Arugula – This salad is so delicious and also really high in protein and fiber!

Spinach Potato Fritters – A healthier version of spinach fritters are sure to please everyone – make sure you make enough!;)
